Healthy, No Carb, Easy Eggplant Lasagna


Love eggplants? Do you also love Lasagna but want to ditch the carbs? Here is a super quick and easy recipe that I have been making and LOVING! Who said Lasagna can’t be guilt free? Eating clean doesn’t have to be boring!!!! All you will need is 10 mins to prep… you are going to be shocked at how EASY and delicious this is…

Here’s what you will need:
1 eggplant (sliced)
1 package of extra lean ground turkey (I like turkey because it is the most lean and the least fat)
1 jar of your favourite tomato sauce
Shredded Mozzarella

Vegetables of your choice to add to sauce:
(Here’s what I used)
1/2 large onion OR 1 small onion
Sliced white mushrooms
Hot banana peppers

Cooking instructions:
1. Preheat oven to 375 degrees
2. In a large saucepan, saute onions
3. Add turkey into the saucepan
4. Drain excess water from the saucepan
5. Add your vegetables & add tomato sauce
6. In a baking dish, layer eggplant across the bottom of the dish
7. Add a layer of your meat sauce, topped with a layer of cheese
8. Repeat steps 6 & 7 until you are at the top of the dish
9. Optional: I crumbled goat cheese over the top for extra flavour
10. Bake covered for 25 minutes, remove tinfoil and bake for another 15 minutes
11. ENJOY!!!!!!
